So you’ve decided to freeze some bread and now you want to know the best way to defrost it. The good news is frozen bread can be revived, and to be honest, if done right, it can be pretty close to fresh baked bread.

How do you defrost bread, the right way, you ask?

A whole loaf of frozen bread can be revived to nearly fresh baked condition in a 350° F oven. Depending on the loaf size it will take 20-40 minutes. For rolls, it takes just 10-15 minutes. For sliced bread, using a toaster will revive frozen bread to perfection.

Let’s take a closer look at each of those options, starting with a whole loaf of bread.

Defrosting a Whole Loaf of Bread

I know it seems pretty hard to believe that frozen bread can turn out almost as good as fresh-baked bread. I was doubtful in the beginning as well. But if you follow the steps below, you’re sure to experience the same result.

I’ll throw out the caveat, that this presumes you stored your bread in your freezer in a way that maximizes freshness. We have an article on that here, if you’re not sure about that.

So, assuming you did, let’s tackle those steps.

Step 1: Preheat your oven to 350° F.
Step 2: Remove your bread from the freezer and plastic bag.
Step 3: Place your bread directly on your center rack.
Step 4: Bake bread for 20-40 minutes (smaller loaves will be on the low end while large loaves will be on the higher end).
Step 5: Remove from oven and let cool for a couple of minutes before slicing.

You’re looking for a crispy crust that has flex and a loaf that will give if squeezed. If your loaf of bread is a soft sandwich loaf, and you’re wanting to keep a soft crust, try brushing melted butter on the crust about 10 minutes into the bake.

*If you go the butter route, don’t put your bread directly on the rack. Use a sheet pan instead. Because obviously you don’t want burned butter all over the bottom of your oven. 🙂

Defrosting Rolls

With rolls, you’re certainly going to need to bake for less time than a large loaf of bread. And you’ll likely want to revive them a bit more with some brushed butter on top.

Once again, follow these steps and you’re sure to be just fine.

Step 1: Preheat oven to 350° F.
Step 2: Remove rolls from the freezer and plastic bag.
Step 3: Place rolls in a baking dish and brush melted butter on top.
Step 4: Bake for 10-15 minutes.
Step 5: Remove rolls from oven and cool for a couple of minutes before serving.

A nice soft roll is what you’re looking for here. If you notice your butter tends to burn, just wait to brush butter on your rolls until you’re halfway through the bake.

Defrosting Sliced Bread

Defrosting sliced bread is by far the easiest process of the bunch. Our go-to methods are:

  1. Toaster Method:
    For soft bread, place frozen slices directly in a toaster, stopping the toasting process earlier than a full cycle. If it’s not completely thawed, pop it in again for a few seconds longer.

    If toast is desired, it’s even easier, just let it toast for a full cycle. If it doesn’t toast in one go, let it go twice.

  2. No Toaster Method:
    Simply placing frozen bread in a pan at medium-high heat will do the trick for both soft bread or toasted bread. The pan takes much longer than the toaster for toasting but works equally well. Takes just a few minutes on either side for soft bread and 3-4 minutes per side for toasted bread.

    For something a little more like what you’d find at a diner, melt some butter in the pan first. This is one of my favorite ways to prepare sourdough.

What About Bread You Don’t Want to Bake?

There are several types of bread that turn out well without baking them to defrost them. A few of those types are:

Bagels
Hotdog Buns
Hamburger Buns
Soft Sandwich Loaves
Flat Bread

The trick here is leaving them in the bag the entire time they are defrosting and letting them thaw completely, sitting at room temperature (not the fridge).

The plastic bag (which doesn’t typically help in most circumstances) will help hold in moisture during defrosting, which turns out great bread.

Something to keep in mind is the humidity of your environment. If you live in an extremely wet environment, defrosting in a plastic bag might not be best for you.

One tip if you find your moisture levels are so high that you end up with soggy bread, is to place a folded paper towel in your bag with your bread. Put it in during freezing and keep it in while defrosting.

In many situations, that will resolve the moisture issues.

How to defrost bread in the oven

This is by far the best method for defrosting whole loaves, but also works for individual slices. Preheat the oven to 160°C/150ºC fan oven/gas mark 3. Wrap the loaf in a piece of baking foil, put on a baking tray and bake for 25 to 30 minutes. If defrosting individual slices, line them out and bake for five to 10 minutes. 

How to defrost bread in the microwave

Yes! Microwave defrosting bread is safe and effective, especially if you’re defrosting sliced bread. Take out the individual slices you want to defrost from their packaging and defrost individually on a microwave-safe plate for 15 to 20 seconds each, using a high setting. We don’t recommend defrosting a whole loaf in the best microwave as it’s likely to go dry.  

How to freeze bread correctly before defrosting

Ultimately, the success of your bread defrosting operation is largely dependent on how the bread was frozen in the first place. Freezing and defrosting slices of bread is undoubtedly easier than defrosting whole loaves – simply take out the number of slices you need and defrost in the microwave or in your toaster if it has a defrosting function. 

But say you prefer serving a whole warm loaf with a family meal – then what? Well, the most important thing is making sure your loaf is stored in some kind of protective casing that will prevent moisture getting into it. Cling film and plastic bags are often used, but they’re not environmentally friendly, and you’ll have to unwrap the bread before popping it in the oven. After all, you spent all that time creating perfect loaves of bread – you don’t want to mess them up now! Knowing the best way to defrost bread will be the difference between a vibrant and a boring loaf.

Defrosting frozen bread does not require a long period of time in the refrigerator as meat does. The best and quickest way is to put it in the oven at a low temperature and “refresh” it in the oven.

Before we go through the steps on the best way to defrost frozen bread, let’s first talk about the best way to freeze it.

Slice or not to slice? – The best way to freeze bread

When it comes to making a bunch of loaves of bread to be used at a later date, you will want to be sure to freeze it correctly. After all, you want to make sure that all the hard work you put into baking that bread is not lost because you didn’t freeze it properly.

First, consider what the use will be for the bread when you defrost it. I say this because freezing and defrosting slices of bread is quicker and easier than whole loaves. So, if you intend to make sandwiches or have sliced bread for dinner, you may want to slice the bread before freezing it.

Or… you have a family meal, and you want to serve a whole warm loaf so freeze the loaf whole. It’s best to slightly under-bake loaves that are intended for freezing -if you can. This way the bread will have more moisture and be fresher-tasting after it is baked a second time.

How to wrap bread to store in the freezer

First, you will need to wrap the bread to prevent moisture from getting into your loaf. You can use plastic wrap or a plastic food storage bag. Next, another layer of protection will protect it from frostbite. Wrap in aluminium foil or store in a box or tub to protect the bread from the direct cold of the freezer. The best solution is a cardboard box, but these are pretty tricky to find small enough. You can double wrap with foil for extra protection instead.

Defrosting slices of bread at room temperature

If you have sliced your bread you can simply remove the number of slices you wish to defrost from the freezer. Place on a plate and cover with a piece of kitchen roll and wrap with plastic wrap. The plastic wrap prevents the bread from drying out too much. Whilst the sheet of kitchen paper will soak up any excess moisture released as the bread defrosts.

Best way to defrost frozen slices of bread in the microwave oven

The best way to defrost slices of bread is at room temperature, but sometimes we just don’t have the time. Thankfully, the microwave will work too! But, you will only want to use the microwave for defrosting individual slices of bread and not a whole loaf, as it will dry out.

Just take out the many slices you need. Place them on a microwave-safe dish or plate. Cover with a sheet of kitchen paper, and heat on a high setting for 15 to 20 seconds. You will end up with soft, ready-to-eat slices of bread.

The best way to defrost bread is by baking in the oven

The best way to defrost a whole frozen loaf is to “refresh” it in the oven. You will want to preheat your oven to 410F (210C). If you use the baking stone, put it in the oven while it preheats. Place the loaf into the oven for 8-22 minutes, depending on the size of the bread. Water can be added to create steam for a shinier crust if you wish. Small rolls and bagels will only need 5-10 minutes.

Tip: If you find there that the bread colours too quickly, reduce the temperature of your oven. Bread that is already “well coloured” will need to be baked at a lower temperature of 350F (180C). 

The core of the bread can be tested with a temperature probe to check that it is fully reheated. Check that the temperature is above 131F (55C) before removing.

What does refreshing the bread do?

When bread is at room temperature the starch particles will be changing their structure to become more like their hard, pre-baked state. Freezing slows this down, but when bread is thawed, the starch retrogrades into a weakened state, expelling water in the process. Freezing also dampens many of the bread-like aromas we associate with freshly-baked bread.

By refreshing it in the oven, water is retained in the bread. This makes the outside crispy and keeps the centre moist. The fresh bready aromas and flavours are also brought back to life. The bread tastes, smells and feels almost as good as when it came out of the oven the first time!

Can you thaw frozen bread without baking it?

You can let frozen bread loaves defrost at room temperature, instead of baking them. The crust of the loaf will be less crisp and it won’t taste as fresh as if it were baked, but it will definitely be useable.

Before we talk about the simplest and quickest way to defrost bread, it’s important to know how to freeze it properly. This will definitely be quicker than kneading dough! So, to keep your bread in great shape there are a few steps to follow:

  • If the bread is warm it must cool to room temperature before freezing, otherwise, when you come to defrost frozen bread you run the risk of it crumbling.
  • Keep the bread covered in a bag. If the icy temperatures get directly to the bread it will spoil. A bag also prevents bacteria forming, and will mean that you don’t end up with bread that’s too dry.
  • If you know that you’ll only want a few slices at a time, divide your portions into separate bags.

Whether you make it yourself or pick it up from your favorite local bakery, there’s nothing quite like fresh-baked bread. From the crispy crust, to the chewy, doughy inside, to that delicate yeasty smell, I’m a happy camper.

Trouble is, all of that heavenliness lasts just a day or two before your bread transforms into something resembling a loofa—tough, scratchy, and not-so-appetizing.

Of course, the easy way to avoid sad, stale bread is to freeze it at peak freshness and defrost it as needed. In theory, it’s super simple: Just throw your bread in the freezer, then grab it, defrost it, and let it come back to life when you’re ready to enjoy it. You probably haven’t thought too much about how to defrost your bread, though, right?

Thing is, anyone who’s ever defrosted bread knows it’s not actually that simple. Half the time, you bite into your toast or sandwich and taste nothing but freezer burn.

Yes, freezing extra bread is still a great idea—and the perfect way to have bakery-quality loaves available at all times. (Who doesn’t want that?) You just have to do it right—because, yep, there is a proper way to defrost bread.

What’s the right way to freeze bread?

Key info here, guys: Getting your bread to defrost nicely starts with freezing it the right way. So, no, you can’t just throw a loaf of bread into the freezer and hope for the best.

“The best way I’ve found to freeze bread includes a three-step wrapping process,” says Tessa Nguyen, RD, LDN, founder of Taste Nutrition Consulting. Here’s exactly how she does it:

  1. Wrap the bread (sliced or whole) in a layer of parchment paper or wax paper.
  2. Cover that with a layer of plastic wrap or reusable beeswax wraps.
  3. Place your twice-wrapped bread into an airtight, sealed, reusable container. (This should be either a hard-sided glass or plastic container or a reusable silicone baggie.)

Whether you freeze your bread sliced or whole is completely up to you (and the size of your freezer. If you do opt to freeze slices, though, you should wrap each slice in two layers and pop them all in an airtight container together.

Freezing slices individually is also a good idea if you think you’ll only be eating a slice or two at a time, says Nguyen. Otherwise, you’ll defrost a whole loaf but won’t be able to finish it, leaving you in the same place you started.

While Nguyen likes using silicone baggies for slices (so you can squeeze excess air our easily), she prefers rigid containers for loaves, so they don’t get squashed.

And, just in case you’re wondering, the whole three-step process is worth it. “It might seem like overkill, but it helps keep the moisture in the bread, and prevents it from getting freezer burn and smelling and tasting like the rest of the freezer,” Nguyen says.

You’ll need to freeze different types of bread at different times, though.

Ever wonder if different types of bread freeze better than others? Good news: “I’ve had success with freezing all types of bread, provided I follow the three-step wrapping process,” Nguyen says.

The key is to freeze the bread well before it starts to go stale.

For fresh-baked bread, this means freezing within a day or two of baking or buying it.

Grocery store breads (think packaged, sliced loaves, English muffins, and buns) typically contain preservatives, though, so they stay fresh for about a week at room temperature. Any bread products you buy in the center aisles should be frozen within that week.

Here’s exactly how to defrost your bread.

To defrost a whole loaf (or at least a large piece) of bread, pop it in the refrigerator overnight, says Nguyen. Then, warm it in a 325-degree oven until warm throughout and slightly crispy on the outside (usually about 20 minutes). This works for yeasted breads (baguettes, sandwich bread, buns) and quick breads (banana bread, pumpkin bread, coffee cake).

To defrost individual slices of bread, you can skip the refrigerator step and simply place frozen slices directly in the toaster oven on the “defrost” setting. You can also pop them in a 325-degree oven until heated through and slightly crispy on the outside (about five minutes).

From there, enjoy your newly rejuvenated bread however your carb-lovin’ heart desires.

The bottom line: Wrapping and sealing your bread well before freezing will help you defrost it so it tastes as good as new. From there, defrost in the fridge and bake it back to life.
